2/3 cup buttermilk baking mix
2/3 cup milk
4 large eggs
1/4 tsp salt
1 package (10 oz) frozen cauliflower, thawed and drained
4 oz processed cheese spread, cut in cubes 1/2 cup sliced scallions

Heat oven to 350°F. Lightly grease a 9-inch pie plate.

In a large bowl, whisk buttermilk baking mix, milk, eggs and salt until blended. Stir in remaining ingredients. Pour into prepared pie plate.

Bake 30-35 minutes until puffed and golden. Cut in wedges to serve.
