While its true that the thought of eating meat does not appeal to many folks for many reasons, the thought of eating raw meat will probably appeal to even less. I sure don’t want to get into a debate regarding any of the philosophical, cultural, dietary, or whatever reasons for this but for those of us who are of a more carnivorous nature, I offer up the fixings for ….

Steak Tartare

1 pound freshly ground sirloin
1 egg yolk
1/2 cup capers
1 clove garlic –chopped
1 tbs. prepared mustard
2 tbs. tomato paste
4 tbs. parsley chopped
1 tbs. paprika
salt to taste
black pepper to taste (I prefer a healthy amount)

1) Put ‘em all together. Using the back of a fork and tablespoon, press the mixture with the spoon through the tines of the fork. The tartar mixture should be of an even, finely mashed texture.

2) Adjust your seasonings. Serve on buttered toast, salad leaf or finely sliced vegetable wedge.

Anchovies or caviar can be used for if you want to liven up the flavor.

Makes about 4 servings
