Big noodles similar to hokkien noodles, but usually sold fresh, uncooked and unoiled. They are soft, pale and work in everything. Another noodle, mian xian is a thin pale wheat noodle that is sometimes referred to as shanghai noodles, but the real shanghai noodle is more substantial.

To Cook: Boil fresh noodles in lots of simmering water for 4-5 minutes. Drain and rinse well with cold water. Drain again and set aside, covered, until needed.
