the Birthday noodle! E-fu is cantonese, also called shi dan mian in Mandarin or pancit canton in the Philippines. These are large rounds of looooonnnnnng tangled noodles, and indeed, the longer the noodle, the longer (and luckier) your life will be. When dried, the noodles are delicate, so handle carefully.

To Cook: Boil for 2 or 3 minutes at a rolling boil in plenty of water. Never cut them.
