A tasty version of fairly mature (half belegen) Gouda cheese containing cumin seeds (this name used in the Netherlands and countries to which it exports; just sold as "komijnkaas" in Flanders, though.)



Prior to spelling reforms in the mid-20th century, the city (and the cheese) were known generally as Leyden, which lingers on in English in Leyden jar.
