Emlett is an English cheese made of sheep's milk and produced by Mary Holbrook of Sleight Farm. It is pressed into small rounds, and is covered in a penicillin rind specked in red and brown. Aged Emlett is said to have the consistency of ice cream with a nutty flavour. The fat content is on the low end of the soft cheese scale, at 40%.
