This is a great starter, and you can make it in ten minutes flat.
Ingredients: (4 generous portions)
- 2 kohlrabis (peeled if they're very tough, otherwise whole)
- 4 tablespoons butter
- 60 grams Parmigiano (Parmesan) cheese, to grate (or any grated dry hard cheese), or 100 grams for a creamier dish
- 2-3 tablespoons breadcrumbs (double that if using the greater amount of cheese
- salt and pepper to taste (unless the breadcrumbs are seasoned already)
Method:
Chop the kohlrabi into matchsticks, or slightly thicker (you can halve it, then chop or slice each half thinly in one direction, give it a quarter-turn, and slice again). Cook these in the microwave oven with a few spoonfuls of water for about 5-6 minutes (or blanch them in boiling water for a similar period, if you must). Meanwhile, finely grate the cheese.
Toss with the butter. Add the cheese and breadcrumbs and toss again. Nuke again for about a minute, until the cheese melts (still no microwave? pop it in the preheated oven or toaster oven in a suitable dish for a similarly brief stay).
Garnish with plenty of fresh basil (or any fragrant herb), and sprinkle with salt and pepper. Serve at once.
