Preparation and cooking time: 30 min
Heat some oil in a frying pan, add the leek and cook over a moderate heat for 4 minutes, until soft. Beat the eggs lightly with a fork and mix the beaten eggs with the cooked leek and the sweetcorn. Heat some more oil in the frying pan, add the egg mixture and cook over a very low heat for 15 minutes until the frittata is set. If you like, put the frittata under a preheated hot grill for 1-2 minutes to brown the top.
