Healthy Broccoli Cheddar Rice

Instructions to the Cook: Preheat oven to 350 °Fahrehheit. Heat the olive oil in a 12-inch skillet over medium heat. Add the onion and cook until translucent, stirring occasionally. Add the broccoli and garlic to the skillet and cook until the broccoli is crisp tender, continuing to stir occasionally. Mix in the milk, soup, and rice. Cook until [145°F|hot}, stirring occasionally to prevent burning. Stir in the cheeses and spoon the broccoli mixture into an 11x8x2-inch (2-quart) baking dish. Place in preheated oven.Bake for 20 minutes or until hot or until desired level of doneness has been achieved. Sprinkle with minced parsley at the table.
