Ingredients:

cod, or
haddock, or
halibut
1 small
leek, sliced
1 small
carrot, sliced
1 courgette, sliced
3 tablespoons
orange juice or
wine
Oil for frying
Serves: 1
Preparation and cooking time: 25 min
Heat the oil in a large saucepan, add the leek and carrots and fry for 4 minutes, until soft. Stir in the orange juice or wine, cover with the courgettes and place the fish on top. Cover the pan with a lid and simmer for 6-8 minutes until the fish turns opaque.
