• Remove kernels of corn.
  • Melt butter, add onion and saute 2 or 3 mins.
  • Add the sliced leek and saute a few mins more.
  • Add corn and potatoes and toss together with onion and leek.
  • Add broth and milk and bring just to a boil.
  • Add salt and pepper to taste, then simmer for 20 mins.
  • Add the cream and serve hot, sprinkled with chopped parsley.
