Corn & Cheese Chowder


2 large onions, peeled and chopped
1 tblsp oil
clove garlic, crushed
2 tsp cumin seeds
4 cups chicken stock
2 med potatoes, peeled and chopped
1 cup creamed corn
2 cups corn kernels
1/4 cup fresh parsley
1 cup grated cheddar
1/4 cup natural yoghurt


1. heat oil and brown onion till golden.
2. add garlic and cumin and cook 1 min, stirring constantly
3. add chicken stock, bring to boil add potato then reduce to simmer, uncovered, 10 minutes
4. add all corn and parsley, bring to boil, reduce heat, simmer 10 mins
5. stir through cheese, pepper to taste and yoghurt. heat gently until cheese is melted, then serve
