Scampi is a light, flavorful shrimp dish that can be used as a main course, appetizer, or side.
You will need:
- 1 lb raw shrimp
- 1/4 c white wine
- 3 tbsp butter
- 1 egg, beaten
- 3 cloves crushed garlic
- salt and pepper
First, peel and devein the shrimp. In a large skillet, heat the butter and garlic on high. While the butter is melting, dip the raw, cleaned shrimp into the egg mixture, drain them off, and drop them in the skillet. You should sauté the shrimp quickly over high heat, for 2-4 minutes. You'll know the shrimp is done when they turn a vibrant pink color.
When the shrimp is fully cooked, add wine and salt and pepper to taste. Serve immediately.
