A traditional dish of the Philippines.


2 lbs pork 1 head garlic -- crushed 1/4 cup sugar 1/2 cup vinegar 1/2 cup soy sauce 2 1/2 cups water 8 whole peppercorns -- crushed some salt


  1. Slice pork into bite-sized pieces.
  2. Combine all ingredients and bring to a boil.
  3. Lower heat and cook hour or until pork is tender (adding water if necessary).
  4. Add salt to taste.
  5. Serve with steamed rice.
