An unpasteurised sheep's milk hard vegetarian cheese from Cornwall. Tala has a melting mouthfeel despite being a hard cheese. It's caramel, rosemary and lanolin flavours are typical of sheep's milk cheeses. The fat content is 48%

The cheese is matured for five months before release to the market. It was created by Hans and Heather White and has won bronze at the British Cheese Awards.
