This crumbly rich cookie/biscuit goes very well with cheese and coffee at the end of the meal, but I find they often don't survive long enough for that - they are temptation on a plate.
- Preheat oven to 200C/400F
- Cream together butter and peanut butter, until smooth and fully incorporated
- Add the egg and beat well
- Sift in flout and paprika
- Add cheese and combine everything into a ball using first a knife, then your hands
- Roll out, between 2 sheets of baking paper, until approximately 1/4 inch thick
- Cut up - I basically take a rustic style and divide the dough using a knife, but if you want something fancier, feel free to use a cutter
- Bake for 12-15 minutes until golden brown
