This crumbly rich cookie/biscuit goes very well with cheese and coffee at the end of the meal, but I find they often don't survive long enough for that - they are temptation on a plate.



  1. Preheat oven to 200C/400F

  2. Cream together butter and peanut butter, until smooth and fully incorporated

  3. Add the egg and beat well

  4. Sift in flout and paprika

  5. Add cheese and combine everything into a ball using first a knife, then your hands

  6. Roll out, between 2 sheets of baking paper, until approximately 1/4 inch thick

  7. Cut up - I basically take a rustic style and divide the dough using a knife, but if you want something fancier, feel free to use a cutter

  8. Bake for 12-15 minutes until golden brown
