Basically,
almond brittle. Dead easy to make. Looks and tastes really impressive.
Put the almonds on a tray. Put them in a moderate oven for
a few minutes until browned. Shake them about a bit so they cook evenly.
Heat the sugar in a heavy pan, and allow to melt. Keep a careful eye on the caramel,
and stir with a metal spoon or spatula. Once the sugar is fully melted, but not burnt, stir
in the warm almonds. Once it's started to cool a bit you can shape it, roll it or whatever. It is normally used for decoration on cakes and similar, as the warm nougatine can be quite finely moulded into twee little designs.
