What can I say about knoephla other than it's distinctly upper mid-west. In fact you could almost restrict it to a three state area, North Dakota, South Dakota, and Minnesota.
Knoephla is a type of soup pronounced (né-fla) in fact a knoephla is a piece of what's in the soup. A knoephla is basically just a piece of dough usually square and not too large (smaller than ravioli). Knoephla soup is what is commonly reffered to as mana, the food of the gods. It is the greatest soup ever devised by man. The following is a very basic knoephla soup recipe:
Broth
2 qts. water
3 tbsp. chicken base
1 bay leaf
1 small onion
1 tbsp. plus 1 tsp. margarine
parsley flakes
3 c. milk
Dough
3 c.
flour
1 1/2 tsp.
baking powder
3/4 tsp.
salt
