Blueberry soup is found in many places, amongst which are Scandinavia, Finland and Eastern Europe.

In Finland, it is a favourite of long distance cross-country skiers, when they're taking part in a 50km competition for example. It should not be mistaken for a fruit juice drink, especially since the Blåbärssoppa cartons you see in the Swedish supermarket may make you think it is.

There follows a Swedish recipe, for the soup, which is thickened with potato flour and should be eaten cold with a little whipped cream or yoghurt. It may also be poured hot over desserts such as pancakes or waffles.



  1. Bring the water to the boil in a saucepan.
  2. Add the blueberries and sugar.
  3. Simmer for a few minutes.
  4. Mix the potato flour with a little cold water, and stir slowly into the pan.
  5. Cover and cool.
