Back to the Dim Sum metanode
Best served with spicy soy sauce. Salmon makes great dim sum.
- Mix salmon, egg white, salt, pepper, sesame oil, and chives together. Place one tablespoon of mixture onto a wonton wrapper.
- Fold dough over to form a half moon. Moisten edges with beaten egg, then starting at the right, make 1/4" pleats to the left until you reach the end; press to seal. Bring 4 cups of salted water to a boil.
- Poach 8 dumplings at a time about 1 minute, or until dough is cooked through. Drain and serve.
