A very moist fresh cheese, similar to feta, made of unpasteurised sheep's milk. Olde York is very sweet and acid in flavour, and is an excellent choice for grilling and cooking with (especially with potato dishes).

It is produced in England by Judy Bell of Shepherd's Purse dairy, and was a successful entrant to the British Cheese Awards in 1996.

Olde York is ripe from ten through twenty-two days, and has a fat content of 45%
