To make 16 of these fine biscuits you will need: 110g self-raising flour
1 rounded teaspoon ground ginger
1 teaspoon bicarbonate of soda
40g granluated sugar
50g margerine
2 tablespoons golden syrup

Pre-heat the oven to 190 degrees Celcius, (375 F)and grease one large baking sheet.
Firstly sift the flour into a large bowl then add the ginger, sugar and bicarbonate of soda. The margerine should then be rubbed in until the mixture is crumbly. Next add the syrup and stir til a stiff paste is formed.

Divide the mixture into 16 pieces and roll each piece into a ball. Flatten each ball slightly and bake for 10-15 minutes.
Once cooked allow them to cool for 10 minutes. Store in an air-tight tin.
