One 12-ounce can/bottle full-bodied beer
2 large eggs
2 cups milk
4 Tablespoons vegetable oil
2 teaspoons vanilla
2 cups flour
2 Tablespoons sugar
2 Tablespoons baking powder
1/4 teaspoon salt

Using a hand whip, whip eggs until fluffy, then add flour, milk, sugar, oil, baking powder, beer, salt and vanilla until smooth. If too thick, add milk. Heat skillet over medium heat and grease with cooking oil. For each pancake pour as much batter as you like into hot skillet. Cook pancake until puffed on top and bubbling. Turn and cook until golden brown.
