1-2 cup of blackberries (peaches, or other fruit)
1 cup of rice/soy milk (vanilla)
1 cup of sugar
1 cup of flour
1 stick of margarine (1/4 cup of Benecol or other margarine) Note: This has always been the exception to the "one-cup rule" -- the "one-stick" exception. But since margarine doesn't come in sticks (often?), that doesn't even work. Yeah? Yeah!
Spray Pam (or other vegetable non-stick stuff) on dish
Spread fruit in dish
Sprinkle with extra sugar to keep the fruit from sticking
Mix flour, milk, sugar, margarine and pour over the fruit.
Bake at 350°F/175°C for 45 minutes to 1 hour (based on size of dish)
Check with toothpick
