Dried porcini mushrooms are amazingly flavourful. Just a few reconstituted in warm water, drained, and chopped can make a wonderful omelette. The soaking liquid, usually referred to as "mushroom liquor" is wonderful as well. Put it in soups and sauces.

Another nice thing to do is to drop a few pieces of dried porcini in some very good extra virgin olive oil and let them steep for a few days. Porcini oil is great drizzled on a baked potato, in salads, or simply on good crusty bread.
