Lemon Snowdrop Cookies

These cookies are tiny little lemon-y bites of goodness and joy. I really enjoy making these. You must make the filling for them. It is what gives them most of their flavour. Dusting them with powdered sugar afterwords makes them look really pretty too!

DIRECTIONS

for the cookies...
  1. Preheat oven to 400*F 200*C
  2. Mix butter, powdered sugar, and lemon extract together.
  3. Stir in salt and flour.
  4. Form into 1" balls and place 1" apart on ungreased baking sheet. Flatten slightly.
  5. Bake 8-9 minutes until slightly browned on the edges.
  6. Let cool on racks.

for the filling...
  1. Mix all filling ingredients in a small saucepan.
  2. Cook over medium hear until mixture thickens and boils.
  3. Let boil 1 minute.

putting it all together...
  1. When cookies have cooled, put in pairs of two.
  2. Put some of the still warm filling between each set of cookies and press them gently together.
  3. Dust with powdered sugar. It makes them look even prettier.
