sughi is a must (grape juice) based sweet that originates in the Italian town of Modena.
Its taste is sweet and sour, and its color is normally purple, though a lightly colored variety (from white grapes) can also be found.

Once a family preparation, which was cooked in Autumn after the harvesting and squeezing of the grapes, sughi can today be purchased in stores at around the same period of the year.

Recipe for sughi

Ingredients

  • one tablespoon flour
  • one cup must (unfiltered grape juice)
  • a pinch of salt (optional)

Preparation

Combine the ingredients in a saucepan, paying attention that the flour does not form lumps. Bring to a boil and let cook for two minutes. Pour on a dish and let it cool - it should acquire the consistence of Jell-O. The longer you boil the sughi, the harder the final product will be.
