Also called
homolactic fermentation, this is a type of
lactic acid fermentation in which
sugars (such as
lactose,
glucose, or
pentose) are converted entirely, or almost entirely, into
lactic acid. Compare
heterolactic fermentation. Both heterolactic and homolactic fermentation are done by lactic acid
bacteria.
