A confection made in Puerto Rico, consisting of fried plantains ( = Sp. platanos) mashed with garlic ( = Sp. ajo) and rendered fat back ( = Sp. chicharones). It may be served plain or stuffed ( = Sp. relleno) with seafood, chicken or other meat. It is often served as a side dish or with chicken broth ( = Sp. caldo).
