Loosly translated, gunkan means "little boat" in Japanese.
Gunkan are made by taking a small pad of rice, and wrapping it in a piece of nori about twice as tall as the pad of rice. The resulting "cup' is ideal for holding the looser sushi ingredients, i.e. Ikura, Tobiko, Masago, Uni, or Hotate-Gai.
