7 pounds, green cucumbers, sliced 1/4 inch thick
2 cups, slacked or pickling lime
2 quarts, vinegar
4.5 pounds, sugar
3 tablespoons, pickling spice
1 tablespoon, salt

Soak cucumber slices in a solution of 2 gallons of water and the lime. Do not use an aluminum container! Be sure to stir the slices well so they become well coated, and let it soak for 24 hours. Afterwards, rinse the slices thoroughly and soak in clean water for three more hours.

Then, drain the slices and cover them with the vinegar, sugar, spice, and salt. Be sure to blend everything well and let the mixture stand overnight. Yes, this recipe is a commitment. But they are the only sweet pickles I like.

Finally, bring the mixture to a boil and then let simmer for 35 minutes. Can the mixture in sterile jars and seal.
