A village in Burgundy, somewhere between Troyes and Dijon.

Also, a soft, white, fat cheese; among the very best cheese I know, right up there with Beemster cheese.

This is indeed a fantastic cheese. Chaource is to Camembert as Cheshire is to Cheddar - whiter and crumblier.
