Hot. Dusty. Thirsty. Whether you're rounding the bend on a multi-day pilgrimage through the flea markets in Mexico City, coming in from working in the garden, or just rocking gently on a porch swing in the humid summer night air, this traditional Mexican beverage is a sweetly refreshing kiss to the senses:

Agua de Pepino (Cucumber Limeade)

  • 1 cucumber, peeled and cubed
  • Freshly squeezed lime juice (2-3 limes)
  • Sweetener to taste (a quarter cup of sugar or Splenda is good, those favouring rice sweeteners or other are on their own)
  • Spring water or filtered water
  • Ice

Put cucumber, sweetener, and lime juice into the blender, and then top off with water (in blenderese, that means fill until there's a two inch clearance between the still liquid and the top of the blender). Blend at high speed for a minute or so. Strain well, and serve over ice with a thin slice of lime floating on top.
