A good recipe for pico de gallo is as follows:

  • 1/2 kg diced ripe tomatos
  • 1/2 cup chopped white onion
  • 1 cup fresh cilantro leaves
  • 4 large fresh serranos or jalapeno peppers chopped fine, seeds and all
  • 1/2 cup ice water
  • salt to taste
  • fresh lime juice to taste

Mix all veggies and herbs with the ice water, add salt and lime juice. Stir, but not too much - this salsa is almost a relish and should be kept crisp, never mushy. Good with everything.
