In journalism circles, the lobster trick is the late-night shift, starting around midnight. Explanations of the "lobster" bit differ, but "trick" is a sailors' term for a shift. Lobsters are nocturnal, however, and this may be enough to explain things.

The rest of the world would call this the graveyard shift.
