The secret to getting good service in a restaurant in Italy is to realize that you do not rush Italians. They don't like it. Rome may be a huge, bustling city filled with homicidal motorists and people who will kill you for a parking space, but the waiters will always take their time to finish a cigarette or glass of wine before coming to your table.

Just because they won't say "you want fries with that?" doesn't mean you'll be eating bad food. You'll just have to wait for it, which isn't such a bad thing after all. Rome is not without it's charms.
