Black Table Mustard
Ingredients:
- 2 cups black mustard seeds
- 1 cup superfine sugar
- 4 tablespoons rum
- 2 tablespoons heavy cream
Grind the mustard seeds finely and place in a small bowl. Add sugar and stir well. Add the rum and the heavy cream and stir until you have a smooth paste. If the paste is too think, add a tablespoon of white vinegar, or thin to your taste.
Place mustard in a jar with a tight lid. Mustard improves with age.
Note: this stuff is hot, and not to be underestimated.
