Seafood is big in
Chinese food, especially
saltwater seafoods. Regions where excellent
seafood can be found include
Hong Kong and much of
Guangzhou,
Macau,
Hainan Island,
Shanghai and
Fujuan, as well as
Sydney,
San Francisco and
Boston. Anyways,
Fried Clams are very
tasty. Nice
appetizer.
Ingredients
Cooking
- Cover clams with cold water for 30 minutes, then dry.
- Heat oil, sweeten with garlic. Fry clams in oil quickly until shells open. Add scallion and ginger.
- Add in 1 tablespoon of sugar, some soy sauce and a sprinkle of red peppers. Stir very quickly. Thicken with the cornstarch mixture and serve immediately.
