Temaki is basically
the down-home approach to sushi. Most of us who've had some exposure to
sushi have seen temaki pictured as a cone shaped
hand-roll or two on a beer sponsored sushi poster. Though temaki does not need to be rolled into a cone, it is generally folded, rather than rolled in the way
maki is. Another difference is that it tends not to contain more
exotic ingredients and is often made of common fish or
shrimp, condiments and seasonings,
pickles, or other vegetables.
Making temaki is more or less the same as
preparing maki, but requires far less
skill. Slice your ingredients, spread a layer of
sushi rice across the
nori (you can get toasted nori already sized for temaki in most grocery stores), pile on the fillings, fold it up, and enjoy.
