The main menu item of a taco stand is a taco, as opposed to torta stands, which mainly serve tortas. But the "taco stands" I am most familiar with are the ones located in León and in Puebla city. These serve a number of food items, from tacos and tortas to these quesadilla-like deals called "sincronizadas" (think quesadilla + ham). In Puebla there are also tacos which are called "tacos arabes." These use a thicker flour tortilla which resembles pita bread.
