Pour point is something like a freezing point, except that it refers to fluids becoming so viscous that their viscosity is greater than the forces that would cause them to flow.

Oil, for example, has not necessarily frozen when it stops flowing at a low temperature. It's just become so thick that it's sticking to itself more strongly than pump pressure or gravity can force it to flow, so it stops moving.
