This coleslaw uses several different cabbages with flavours ranging from mild to bitter. It will keep well, and is in fact better the next day.

This should serve six people.

What You Will Need
1 large radicchio
1 small Savoy cabbage
1 small Napa or Chinese cabbage
1 white or Spanish onion
2 teaspoons of capers
2 teaspoons of pickled green peppercorns
salt and fresh black pepper to taste
juice and zest of 1 lime
balsamic vinegar
extra virgin olive oil

What To Do Now
Cut each cabbage in half and remove the core. Slice the cabbages very finely and put them in a large bowl. Slice the onion in half and then slice thinly into paper thin crescents and combine with the cabbages. Easy.

Now add the capers and pickled green onions, salt and pepper, lime juice, a good splash of balsamic, and lash liberally with olive oil. Toss well. Garnish with the lime zest.
