A Tasty Treat!

Embryonic eggs are a delicacy that can be found throughout Cambodia and Laos. As the name implies, they contain the embryo of an unborn chicken or duck and can be either bar-b-qued or boiled. Most commonly, three eggs are served on a bamboo stick and they are one of the most popular night market items. The contents can be flavored with hot sauce and are scooped out with a spoon.

In Cambodia, the best embryonic eggs come from Kompong Song. Eggs are removed from the nest either 4, 8, 12, or 18 days after being laid. The normal incubation period of a chick is about 21 days.

Many unsuspecting visitors have made the mistake of thinking that these eggs were simply hard boiled. This is a nasty surprise on an empty stomach.
