Can be plain water, but the term refers more specifically to spring water, or even more specifically to water running through limestone caverns and breaking the surface in branches in Kentucky.

James Bond orders a "malt whisky and branch water" in On Her Majesty's Secret Service (1967) and a bourbon and branch water in the book Diamonds Are Forever (1956).
