This is really
easy to make. Chop and sauté a white
onion in a mixture of butter and extra virgin
olive oil. Add a minced
jalapeno (seeds and spines included) and sauté it along with the onion. Then add a bunch of spices and herbs, like whole
cumin seed,
ancho chile powder,
garlic powder, onion powder, some
oregano, and a little basil. Cook the spices until they become fragrant. Then open a tin of creamed corn and add it. Put in a
generous amount of frozen corn and add either soup stock or water to thin the soup. Add salt and pepper to taste. Cook for 15 minutes or so, and add rinsed tinned black beans.
This soup is a complete protein. But you could put some corn tortilla chips on top or just munch them on the side.
