Tex Mex Bake


½ package (4 C) uncooked Rodiatore Pasta
2 cloves garlic or garlic powder (of course, real garlic will taste better)
1 28 oz. can of chopped tomatoes
1 package taco seasoning
1 15 oz. can black beans – rinsed and drained
2 C shredded Monteray Jack or Chedder Cheese
¼ C parsley or cilantro (optional)

Heat oven to 350 degrees. In a large saucepan, cook pasta. Drain and set aside. In same saucepan, stir in tomatoes, taco seasoning, garlic, and black beans. Bring to a boil and reduce heat. Simmer, uncovered 5 min. Stir in cooked pasta and 1 C cheese. Spoon into a lightly greased 13x 9 ½ in. baking dish. Sprinkle with remaining cheese. Bake 30-35 minutes or until hot. Sprinkle with parsley.
