A mild, buttery, hard cheese which is vegetarian due to its lack of rennet, Coverdale was popular in the early part of the twentieth century, disappearing for fifty years, and then re-appearing in 1987.
The cheese has a pale yellow rind and is ripe after four weeks' maturing. It was originally produced by the Coverdale Dairy, and is now made by Fountain's Dairy.
