A salsa-ish tomato dip, done in the tradition of the Philippines.
3/4 lb ripe tomatoes
1 tsp ginger -- coarsly chopped
2 tbs peeled, chopped green mango (how to eat a mango)
1 scallion -- finely sliced
1/4 tsp salt
Freshly ground black pepper -- to taste
Steps
- Cut the tomatoes into 1/8 inch thick pieces and cover the bottom of a bowl with them.
- Sprinkle the ginger, green mango, and scallion evenly over the tomatoes.
- Sprinkle salt and pepper over the top.
i prefer it to be a bit more "blender-style", so i just toss everything in a food processor, then chill in the fridge for a while to let the flavors mingle.
