1/2 cup cornmeal
1/4 cup flour
ground red pepper to taste (optional)
salt and pepper to taste
1 egg beaten
1/2 cup milk
4 green tomatoes, cut in 1/2 inch slices
vegetable oil
- in one dish, combine cornmeal, flour, ground red pepper (optional), salt and pepper.
- in another dish, combine lightly beaten egg and milk.
- dip sliced tomatoes in egg/milk mixture, then coat in cornmeal mixture.
- pan fry until golden brown in about 1 inch of hot vegetable oil.
